We’re SO excited to share our neighbourhood burger joint with you. New York theme & International inspired flavor profiles, what true dirty burgers should be… where using your hands is encouraged and the juices run down to your elbows.
Beef it up!!
A great burger starts with high quality meat. Here we use a mix of ground brisket and chuck, and nothing else! Fat is our friend here at DIRTY BURGER. Fat makes the burger juicy and enhances the flavour! Our burgers are 80/20, the perfect ratio.
Griddled not grilled!!
Here’s why. When you cook a piece of meat, you are looking for the Maillard Reaction, the browning of protein, that is the key to great flavour. It’s not that you can’t get that on a grill, but there is a difference between cooking a burger and other types of meat. A big marbled rib-eye steak can form a nice crust on the grill without drying out as it is a whole piece. A burger is different, it is not a whole piece and doesn’t require the same length of cooking, so it benefits from an even, controlled surface that a grill cannot provide. We cook our burgers to a “chef’s medium” to give that succulent light juicy burger, if you want it well-done, just let us know, but you can’t complain it’s dry and chewy.
Use two slices!!
An awesome burger is all about ratio, we believe that one slice of cheese just gets lost in a burger, so we always use two here at Dirty Burger.
Sweet and Savoury!!
You can get burgers on all sorts of different buns, but here we use brioche buns. It’s slightly sweet profile is the perfect compliment for our savoury fillings. They are soft, fluffy and toasts up nicely so it wont fall apart. We slightly butter our buns and hit them quickly in our vertical toaster, to give them that crispy finish just like a classic kiwi toastie! If you have allergies we can still accommodate you! We also stock allergywise buns. They are gluten free, dairy free, soy free, nut free, egg free.. Wow, they practically make these from thin air!
Manu’s favourite part.. The Sauce!
Every Dirty Burger is enhanced by one of our sauces! A good sauce highlights the burger and adds a robust, spicy or special note without smothering the flavour of the meat! We either make our sauces in-house or source them from our friends at Lillie’s Q in Chicago!
